Special ep. – potatoes salad

Episode 2. Carmen, list the recipe!

So, the recipe. American and because of that, with American quantities. Meaning:

2 pounds Yukon Gold potatoes, 1 tablespoon white vinegar, 1 tablespoon kosher salt, plus more to taste, 6 ounces thick-cut bacon, 1 cup Mayonnaise or store-bought mayonnaise, 2 tablespoons red wine vinegar, 1 tablespoon Dijon mustard, Freshly ground black pepper to taste, 1 small red onion, finely diced (about ⅓ cup), 1 rib celery, finely diced, 10 to 12 cornichons, finely chopped, ¼ cup attractive celery leaves, for garnish (optional).

In Romanian, barabule (potatoes), cleaned and cut into cubes. About one kilogram. Boil with salt and a tablespoon of vinegar. White. I don’t understand what the vinegar phase is yet. After they have finished cooking, let them drain and cool.

Bacon. Fry it. After frying, let it drain and cool. Then cut it into pieces.

A red onion, a piece of celery stick as they call it, 10-12 sliced ​​cucumbers.

Some celery leaves. If you want.

A bit of mayonnaise, mustard, red vinegar. Mix them.

Take a bowl, throw all the stuff in it. With some salt and pepper. If you need. Apart from the celery leaves. Which is just for decoration.

Now, if your name is Carmen…. and you listed the recipe do not forget any ingredients. But you forget the quantities and instead of potato salad with stuff you wake up with a stuff salad with some potatoes. Plus you were too lazy to buy cucumbers and you used pickles. But you didn’t mix mayonnaise with mustard and vinegar. Because you listened to the guy that said you can make your own mayonnaise, and you did too much. Let’s move forward!

Ep. 55 – beet and orange salad

Actually a garnish of 3 ingredients, but it became a salad due to my lack of inspiration. 🙂 Yes, sometimes it happens to me too…

Beetroot, washed, cleaned and sliced, placed in a tray (I prefer on baking paper), greased with olive oil and spices (salt, pepper, thyme, etc.), put in the oven over medium heat until softness (but is not burnt 🙂). Bourdain used baby beet – if you have a garden and grow something like that, you will probably be able to use it too… in the supermarket you can only find it ready boiled in a jar.

Red onion, chopped or cut into thin slices, according to preference.

Peeled or sliced oranges. I used red oranges, a little sour. :))

Dress it in oil, vinegar, salt and pepper, plus some mint. If you suffer from chronic laziness, just throw a drop of balsamic vinegar on top and the salad is ready. 🙂

No, the truth is, it turned out really good. 🙂

Cookingbookclub 2 | Bourdain’s recipes :)

The second book proposed at the cookingbookclub in March / April was Appetites: A Cookbook by Anthony Bourdain.

I don’t know how you are, but every time I (re)read Bourdain I get incredibly hungry. :)) Problem number 2 is that I would cook all the recipes (but who else climbs the scales, whoooo ?: D), only that, fortunately, when I look at the ingredients, I discover that there are many things/ combinations with which I’m fighting. So the dilemma is solved like the ness. Instant. :))

However, in record time (obvious sarcasm, for those who accidentally hit this blog), I managed to spoil (only) about 2 recipes. I turned a garnish of beets and oranges into a salad (it has fewer calories if it is called a salad – wink wink 😉) and in addition I invented a shaorma with pork, arugula and quince. (LOL)

My friends didn’t give up and tried a potato salad and, surprise, ratatouille. 🙂 Absolutely delicious pictures and stories in the special episodes from the coming days. ❤

Ep. 54- apple crumble

Grease a saucepan with a little butter. You gracefully throw away leftover apples, which you can use in a cake or compote, cleaned and cut into pieces or slices, it really doesn’t matter. Sprinkle with cinnamon and possibly cardamom and, if you want, sugar. On top, cover the layer of apples with the noodles made from: wholemeal or normal flour, whatever, oatmeal, sugar, butter – about a tablespoon of each, to 2-3 large apples – I put out from eye, 1 tablespoon of flour, 80g butter, 3 tablespoons sugar (yes, I know, is a lot :)) and a cup of cereal. I used a mixture of cereals from Lidl. If you don’t like butter, you can change it with margarine or (vegan) solid coconut oil (keep it in the fridge first). If you don’t want cereal, just use flour. Cover all the apples with the batter. Bake on low heat for about 30 minutes or until the fruits are ripe and the batter on top is golden. 🙂

You can do with other fruits, of course.

It is a creative way to eat fruits and whole grains.

Ep. 53 – crouton salad

Well, let me see, do you remember what you put in it? 🙂 Yesssss. ❤ Canned tuna, canned corn, grated carrot and celery cut into thin slices or cubes. With regular dressing, lemon and oil.

The surprise is the homemade croutons. 🙂 Because I wanted to buy them from the store and Chef said that the ones made at home are better.

Slices of bread or buns – what you have around the house – cut into cubes and throw in a pan. The older the bread is the better, it’s a kind of creative recycling. 🙂 And a way to not throw away food. Pour some oil on them – olive, rapeseed or sunflower and season. I added a little salt, basil and rosemary. On high heat, mix them not to burn and to catch a beautiful color.

Disastrously good! 🙂

Ep. 52 -fake Martini

For reasons beyond my control, I started my year with fake Martini. Which wasn’t a bad option. I mean, well, it could be much worse than that. :)))

The recipe is extremely complicated and requires at least higher education. 😛

Fake Martini: tonic water, lemon juice, green olives. Pour into a glass, mix, add some dried mint and drink. 😀

Of course, in my honor, today you can throw some spirits in the composition. I promise not to tell you. 😀

Ep. 51 – hummus

Well, I don’t know if I told you how excited I am about my blender. Until it, I used to have two options: to buy the hummus from the shop – sometimes is ok, other times not really or to use the meat grinder – a semi-horror experience.

Ever since the blender, I threw all the ingredients in a bowl, I blend them and voila, another recipe came out. :))

You can make it disastrously fast, from a can of chickpeas (200g), 2 tablespoons of tahini (if you do not have, put some lightly fried sesame), 2 tablespoons lemon juice, 2 tablespoons olive oil, salt, pepper. If you want, garlic and paprika, coriander.

With hot sticks or Szekler bread, yummy. 🙂

Ep. 50 – marinated chicken with rice

Chicken breast, deboned and peeled, cut into small pieces. In a bowl, mix some soy sauce, honey and grated ginger (salt and pepper to taste). Add the chicken pieces and mix well, then leave them to marinate for about an hour. Fried in a wok or pan, in hot oil (be careful not to burn yourself 🙂 ).

Rice boiled in water, strained, mixed with canned corn and some finely chopped red peppers.

I ate, I didn’t died, it’s ok. :))

Special ep. – pogăci baby :)

The Hungarian in me made some relatively good biscuits – the one we call pogăci – using my mother’s friend’s recipe. 🙂 Relatively good, they had an unexpected success, people requesting them again, even though I think the dough should have grown more. :))

Well, it’s the kind of recipe that sounds very simple in the recipe book and fills you with hell in practice, because the whole process takes a long time, it requires several rows of packaging and finally you take them out of the oven and although they look burnt, when you cut them they don’t seem to be done. Real disaster!

The base of the dough is a mixture of 500g flour, salt, 2 egg yolks, 10g yeast, 2 tablespoons sour cream, 100g butter (I mixed margarine and lard) and about three quarters of a glass of milk. Kneaded and leavened in the heat. Meanwhile, 500g of pork rinds are passed through the meat grinder, mixed with pepper and salt (if necessary) and divided into three.

In the next step, the leavened dough is spread in a sheet on which we will put a third of the pork rinds paste and which we will wrap in four. Leave to ferment for a quarter of an hour, spread on the sheet, redo the process, packed in the same direction, repeat. Last time, spread it thick, with two fingers, cut it with the glass, make stripes with a knife and grease it with beaten egg.

I stretched them out with one finger and I didn’t bother with the stripes anymore, because that wasn’t the case. :))

I baked them in the hot oven over medium heat for more than 20 minutes. I’m not clear yet, but next time I hope to catch the temperature and time. If you cut them and they look unripe inside, it’s from the fat in the pork rinds. Of course they may be really undone, but you’ll only find out when they get cold. :)))

I had to taste all three trays several times to make sure they were made a little. Which is why I’m not on the scales this month. :))))

Ep. 49 – brownies

Especially for the woman in you, overcooked brownies. ❤ I almost burned them – logically – but how good they came out, you can’t even imagine !!!! 😛

Well, I had the recipe for many years, but this is the first time I’ve done it. Which is why I kept the cake in the oven longer than I should to be sure it was made. :))) As Chef says, brownies is one of the cakes you don’t try with the toothpick. As a result, you either get it or you don’t get it. 😛

How to make: 250g dark chocolate, 200g butter, 300g brown sugar (I put half-half, brown and regular caster sugar), 4 tablespoons apple juice heat gently in a saucepan, mixing on a bain marie or directly on the fire, if you move fast). The idea is to melt, not to boil. 🙂 Cold, mix with 4 eggs, put one at a time (if you have patience), 200g flour, some salt, cinnamon and 100g dried apples (now I realize I put a normal apple, grated and it was super ok). Pour the batter into a tray on baking paper and bake at the medium heat for about 30 minutes. When ready it is slightly moist, although the dough is dense.

It is one of the recipes in which I kept the original amount of sugar. It comes out sweet, but you don’t eat the whole tray at once. 😀 Only a piece with the coffee. 🙂

On the internet you will find different variants, in which dried fruits or flakes, etc. are added. I think you can play with various recipes, until you find the option you like.
