Nigella’s red salad, used as an entree, I think is one of the fastest inventions. From three ingredients, YEIII!
Specifically, a can of red beans, rinsed well and drained is placed in a bowl. Separately cut a red onion, julienne or cubes, as you prefer, and mix with a little vinegar (I used balsamic vinegar) and leave for a few minutes. Mix the beans and onions, top with slices of tomatoes or cherry tomatoes whole or cut in half. The dressing is completed with olive oil. Garnish with chopped green parsley.
If you don’t like the three ingredients, you can add iceberg lettuce, diced bell peppers or croutons toast in olive oil.
